Bolting

Producing seeds or flowers prematurely. Annual and biennial plants switch from storing energy to producing seeds at the end of their life cycle. When a plant is under stress, it may pre-maturely make a flowering stem that produces seeds. However, once a plant bolts, it often becomes bitter. Read more in this blog post.
